A great crop this year, mainly from my middle walnut tree.

Picked and pricked with a silver fork on the 17th, they are soaking now in brine.  

My plan is to try some flavour tests this year.  I'm going to use plain (not spiced) malt vinegar and see how single hot spices work without muddling the flavours with the usual cloves, cinnamon and allspice.   I also want to test the effect of a good dose of sweetener - in this test local honey.
